Typical „American“
pancakes done in a gluten free version.
Ingredients:
1 cup gluten
free flour mix
2 teaspoons baking
soda
1 teaspoon
salt
2 teaspoons
sugar
1 egg
1 cup milk
2
tablespoons vegetable oil
Step by Step
instructions:
1) In a
bigger bowl sift together 1 cup of gluten free flour mix together with 2
teaspoons of baking soda. Mix in 2 teaspoons of sugar.
2) Create a
well in the center and pour in 1 cup of milk. Add 1 beaten egg and add 2
tablespoons of vegetable oil. Mix the batter until smooth. If the mixture gets
to thick you can add a bit more milk to smooth out all the lumps and keep the
batter compact as it should be for pancakes.
3) Heat up a frying
pan, butter it and pour in a portion of the batter for one pancake. (about ¼ cup).
Fry until edges brown and small bubbles have formed.

When it
comes to measuring a portion of the pancakes it is up to you how big you want
them. For us it took an almost full ladle to be the size we liked.
Instead of
maple syrup though we used Nutella and whipped cream. Of course it was
home-made Nutella. We will bring you a recipe for it very soon. If you can’t
wait just google it. There are many variations and it is a really simple
recipe.
