Fitness Super-Cookies

An ideal snack for those of you that keep an eye on your figure and would like a healthy, nutritious snad before they go work out or just in-between. This snack should give you enough energy nutrients to grant a great boost before a workout and during a workout.

Ingredients:
1 cup gluten free oats
1/2 cup shredded coconut
1 table spoon cocoa powder (Dutch processed)
1 teaspoon instant coffee (or ground)
1 teaspoon cinnamon
1 teaspoon flax seeds
1 /3 teaspoon of chili (up to you)
Pinch of salt
2 medium sized ripe bananas
1 teaspoon honey

Step by Step Instructions:
1) Preheat your oven to 170° C

2) In a food processor or mixer mix together 1 cup of gluten free oats, 1/2 cup of shredded coconut, 1 tablespoon  of cocoa powder, 1 teaspoon of coffee, 1 teaspoon of cinnamon, 1 tablespoon of flax seeds, 1/3 teaspoon of chilli and a pinch of salt.

 3) In a bowl mash 2 middle sized bananas together with 1 tablespoon of honey.

4) Mix together your mixed dry ingredients together with the mashed bananas.

5) Lay out a baking tray with baking sheet. Now it’s up to you how you are going to form your Super healthy cookies. You can make them like normal round cookies or to save as much space as possible you can make a whole sheet covering the whole surface of your baking tray.

Tips and Tricks:
This is a really universal recipe where only a little can go wrong. You add or remove ingredients as much as you want. You can add nuts, raisins, cranberries or other dried fruit. If the dough seems to dry add a banana. If it seems to wet, add more dry ingredients.
